Yellow Squash casserole

I googled recipes and ended up with one that had eggs, pulverized
crackers (good way to get rid of a box that wasn't getting used), and
some cheese. The recipe also called for evaporate milk.

My substitutions:
Lowfat milk for the evap
Half the amount of cheese called for
1 egg instead of two

It turned out perfectly.

Served as a side with a small portion of rib eye steak. No other sides
necessary. I already closed my browser so I can't cite the site.

Here's my version:

1-1/2 - 2 c. sliced yellow squash, steamed until just tender
1 c. grated Parmesan cheese
1 c. dried bread crumbs
1 c. milk
1 Tbs. minced onion
1 Tbs. melted butter
2 eggs, slightly beaten
1/2 tsp. salt
1/4 tsp. pepper

Combine all ingredients in a 1-1/2 quart casserole dish. Bake at 350 F
degrees for 1 hour.
