Yamaha V-Star 650 Kuryakyn Hypercharger Problem?

I put on the Kuryakyn Hypercharger on my 2005 V-Star 650 Custom. The pipes on the bike are factory which have been gutted. The bike runs great until I get into a good headwind. Then it acts like it is running out of gas. If I cover the butterflies with my hand as I'm riding, the bike roars back into life. I've been told that I need to go up one more size on the jets, but I'm not so sure. Any thoughts?
 
When the bike starts dieing, apply the choke in small increments.
The additional fuel the choke adds, is similar to increasing the jet sizes.
There are additional adjustments besides the main jets - make sure you know
what you are doing.
