I'm trying to make hazelnut extract since I can't find any without purchasing online. The recipe I found calls for the following:
4 oz. (100g) hazelnuts
3/4th cup or (180ml) vodka
1 vanilla bean, split and scraped
I toasted the hazelnuts and then added them to the vodka (40% alcohol if that matters) while they were still hot, and then I placed the concoction in a couple glass mason jars (not sterilized, not processed, just hand washed jars, lid and screw cap). The recipe says to then leave the jars in a cool, dark and dry place (my bedroom closet) for 3-4 weeks.
I would just like to know if this is a safe way to make the extract. Does the vodka keep the mixture from spoiling during the few weeks it's hidden away? Should I put the jars in the fridge, or would that be too cold?
