With all my health complications is this diet adequate?

Hi everyone I have severe IBS and multiple food intolerances as well as Gerd and other health problems,right now I have a very extreme cold virus that has knocked me down with cough,sore throat ear infection etc.I am very tired and not able to get out and go shopping or prepare food.I am also not able to digest most foods right now because the flu virus has affected my IBS and I have had a bout of diarrhea and stomach cramps.I do well with only a few selected foods such as yogurt,cottage cheese,chicken,rice and soft tofu.

i cannot tolerate beans,lentils,nuts,red meat or fish.

I am allergic to dairy products except for organic yogurt or cottage cheese.I somehow tolerate the healthfood brand of this as they culture it and add enzymes to it.
I am allergic to apples,all beans except soy,nightshades like potatoes,tomatoes and eggplant,and gluten,i do not digest most grains including brown rice but i tolerate well cooked basmati rice or rice cereal cooked to mush.

so my diet is as follows for the week

Day 1

Breakfast:organic low fat 1% cottage cheese
with probiotic cultures,canned peaches and a few corn organic blue corn chips.

lunch:can of organic chicken and wild rice
soup,1 slice of gluten free bread
organic frozen spinach steamed and blended
to mush topped with olive oil and sea salt.

snack:some yogurt with a piece of fruit
like plumb or pineapple slices

dinner:ready made vegetable soup (organic
from health food store) or chicken breast with
rice,cooked carrots with a little butter.

Day 2

Breakfast: brown rice hot cereal
with raisins and soy milk

Lunch:vegetable soup (canned organic)
and cantaloupe slices

dinner: Frozen vegetarian meal
brown rice with tofu and veggies.
