will this daily menu boost my metab and help me lose weight?

ok, 3rd question of the day. I need to change my eating habit because for the last 7 days i've been eating the same thing and losing weight, but today i am 5lbs heavier than i was 3 days ago, even though i've changed nothing. I've been eating 1000cals a day, often less.
here's what i've been eating so far: 2-3ltrs of water. 2 cups black coffee with 2 sweetex no cal sweetners. 2 special k bars (88 cals each) 2 weight watchers crisps (75 cals each) 7 rice crackers (21.9 cals each) 60grams of extra light flora spread (19cals per 10g) and 200grams low fat cottage cheese (88cals per 100g)
Not exactly perfect i know, but i'm a cheese and crisps-aholic so i was trying to cater to my appetite in the healthiest way possible. Plus, i genuinly don't like many fruits, too acidic i guess.

Here's what the new one will looks like, plus 2hrs a day on the excercise bike i bought this morning. (in no particular order)
2-3Ltrs water, 2 cups black coffee with sweetex. 2 special k bars, 2 pack weight watchers crisps, 1 tin drained tuna (117), mixed leaf salad (no dressing) and cherry tomatos and 6-7 rice crackers.

that's roughly 750cals so obviously i'll have to chuck in something like an egg-white omelet for the protein and cals to take me upto 1000cals a day.

I know it's not perfect, i know. But i'm working within my abilities. I used to have an eating disorder so this recent unexplained weight gain is really working against my old nature.
Absolutely NO rice, pasta, spreads, fizzy drinks or more carbs that are in the rice crackers will be eaten.
How does it look, including the 2 hours on the bike?
