Will doing HIIT and weight training lower the chances of fat gain after a crash diet?

I started to eat normal again 2000-2500 calories a day for a 2 weeks now, only gained a pound right now. I used to eat 1000-1200 calories a day for 5 monthes and I gradually upped it to 2500 in 3 monthes. I know I did the wrong thing, but I lost 80 pounds. I also started doing HIIT and weight training so will it minimize or eliminate fat gain now that I eat normally again? I am eating pretty healthy by the way.
