Will a car work properly after a blown head gasket has been fixed?

Yes as long as the lower end of the engine is not damage you should be fine...
 
As long as the heads were machined there should be not problem. Just look for white smoke out the tailpipe and any peculiar smells.
 
if u did not drive it after u saw it then u wont have to machine the head as long as u did not run it hot, otherwise just replace the gasket and u should be ok
