Why is trail hiking so newcomer UN-friendly?

I am 17 and trying to plan some hiking trips with a really close friend. We want to plan a couple day trips, some overnights, and then a really big trip for this summer.

The problem is - I can't find any information! I can't find trail maps or starting locations, not even parking lots.

Wouldn't having young people hiking be something you'd want to encourage? We can't exactly tell our parents that we going hiking, but we don't know where where going, where we'll end up, or when we'll be back. We need help, but I can't find any useful information. I can even get trail descriptions, but no information on where the trail actually is. Someone should really fix this problem.

If you do have any helpful information or resources for us, we are located in North Carolina and were looking at the Mountains-to-Sea Trail, but of course, the websites don't actually tell us anything we need to know.
Specifics please. Vague and completely not helpful is what I'm getting everywhere else. I seriously can't even find the areas for the trails!
