why is the food served at the buffet so bland?

i prefer to eat at the buffet on a cruise rather than the dining room. the food is never hot enough and not really that good. why so bland and has anyone been on a cruise where the buffet food was really good?
 
Buffet food is made in bulk to feed many and thus cannot be seasoned liberally like a made to order dish would be. Buffet items have to appeal to the spectrum of eaters so it is left to the consumer to season at table.
 
It's hard to please a lot of people so they wouldn't use much spice and all that

Not sure about it not being hot
