I'm just really curious as to why she would START doing this now??? It's not like she's a puppy..... I'm wondering if she's getting too many table scraps... she seems to be pooping a LOT more than usual lately... and then i've noticed her 3 times eating it?!?!?!?!?! I've got three young girls, so, i was thinking maybe she's just got an upset belly....

Its a natural habit especially if your dog is a female . They do this to clean up "the den" so they have a clean place to sleep and daschaunds ARE burrowing dogs because they used to hunt rodents or something like that i cant remember right now . but anyway it is normal for dogs to eat their own feces but make sure she doesnt eat too much. 
Some dogs just do that. It's common.
Other dogs do it to "hide" their poop..like if you've yelled at them for pooping in the house, they think it's bad, so they'll just eat it before you see it.
You can buy some tablets to give her with food which will make her poop taste nasty.
You can also just spray bitter apple spray or even vinegar (something your dog won't like) on the poop before she gets to it.
