why is my 2002 pontiac grand prix overheating?

It was saying low coolant and the temp gauge would go up and down multiple times within only a couple of miles. so i put some more coolant in(this happened before) and took it for a little drive and its still doing the same thing. then the temp light comes on for a bit and then fades out as it cools down a bit. the first time this happened i took it back to the lot and told them what happened and they "fixed"it. meaning they told me that when the coolant was put in the first time the correct procedures werent followed afterwards in order to make sure it was reading the correct measurement of coolant.they said something about an air bubble forming in the tank and that it is supposed to be driven a little bit or at least have it idling for a few minutes so it hits the right temp. but now its doin it again only 3 days later. by the way it takes dex-cool coolant, i dont know if that helps.
