Okay, what I was doing was deleting a 160+ bit rate AAC song file and replacing it with a 128 bit rate AAC file, and when I checked the new free space amount on my iPod, it shows I have less space than before.
I deleted a 10.5mb 190 bit rate song from the iPod and then it showed I gained 10.5mb; but then when I added a 7.3mb 128 bit rate song to the iPod, it shows that I lost over 14mb!
So after doing a little investigation (messing around adding and deleting files), it turns out that the problem is the album artwork. Even if the artwork is a small 180x180 JPEG file, for some reason, one time when I deleted the album artwork from one song, I gained 15mb worth of space back on my iPod.
Why is this? How could such a small image take up so much space?
