Why is it some people use a wire mouse and keyboard before setting up bluetooth mouse and bluetooth keyboard?

Is it like that on all bluetooth mouse and bluetooth keyboard? Why do some people do it? Should I get a bluetooth mouse and bluetooth keyboard?

They say it is easy for hackers to see what you are doing.
