You are watching the wrong movies. Some of the upcoming movies like Terminator Salvation and Transformers 2 have unbelievable CGI.

I am Legend is a perfect example of how cgi sucks hard sometimes.
But then again, 300, sin city, watchmen, ironman, transformers, are all freakin awesome.

Yeah, Ingmar Bergman's Seventh Seal is more convincing than any CGI filled movie I've seen. The day CGI has been perfected is the day when you can see a movie where a modern actor like Christian Bale stars in a movie along with a dead actor like Elvis Presley. If you can't see any difference between Presley and Bale in terms of realism, then it will be possible to do absolutely ANYTHING in movies. But right now CGI isn't at that level yet, so of course it cannot be totally convincing.
