...properly tested? Lo and behold the latest version of iTunes has a number of bugs in it. One messes up your iPod's artwork especially on the iPod Classic.
Apple have, in the latest version of iTunes, removed the "Display album artwork on your iPod" checkbox. Unchecking/syching/checking synching was an excellent way of fixing the artwork bug that often resulted in corrupted artwork on your synched iPod.
Now that option has gone. Apple have, in their infinite wisdom, just removed that checkbox so a load of people can no longer easily fix the artwork bug that Apple has never been bothered to sort out.
Thanks again to Apple for releasing some more half-arsed software. Try testing it properly in future.
