Why has it suddenly become "the thing" for restaurants to cut the seeds out of

cucumbers? After a lifetime of eating cukes, seeds & all, I've noticed over the past year or so, that many restaurants here in So Cal are cutting the seeds out of them. I recently got a new recipe from someone where it told you to take the seeds out, too. Why? All I can think of is people might think that the seeds make stuff mushy, but they really don't so I don't know! Any ideas?
