Why don't they go back and put CGI effects into old movies to make them better?

Old movies could actually be somewhat good if you cut out all of the cheesy effects and stunts and digitally redo them.

A lot of people think that's wrong because they're attached to the essence of the old movies they like, even if it has shortcomings.

For example, they did what you described with the original Star Wars trilogy, and the fans got really upset about altering the original.
