Why does the iPhone only respond to fingers?

I know that Apple uses capacitive screen technology, but if it is because of the change of charges which is how the capacitive screen works, why it cannot respond to a conductor? if i use a conductive stylus, it don't work; but if i use a banana, it works! what's the difference?
