Why does so much water come out of meat cooking in the oven?

From frozen...

Is that why the water comes out? I don't understand I have just cooked 2 chicken fillet things in the oven and the whole oven tray is soaking wet :S Are they okay to eat?
 
You would have been better off putting them on a rack. Frozen meat will throw off lots of water.
