Why does Scotland have 3 verdicts to choose from in a court of law?

they should have a fourth, being not in a fit state to answer for themselves, heathens
 
At the end of a criminal trial the jury can go one of three ways. Guilty, Not Guilty and Not Proven.
Can someone please explain why?
