Why does my car blow cold air without the air conditioner?

I have tried this in a few cars (mine and my moms Nissan's) and it is a pretty interesting trick that I would like to know why it works. It never fails to work. Basically after I start the car I turn the temperature to cold (blue) and the the vents to cabin flow (face breeze), I then turn it to defrost for a few seconds, then turn back to cabin flow. Even on the hottest day, instead of blowing the hot air a few seconds prior It blows cool (not AC cold) air immediately. The AC is not on as the car has not made the sound from under the hood it makes when the AC belt kicks in. Why and how does this work? It has perplexed me for some time.
