Why do the colors on my proof look awful even though I provided pantone colors?

I sent my wedding invitations to a print shop to be printed. The first proof was washed out, so we sent the file again (created in quark) as with the colors "coated" and now where there are two color the inks look like they were mixed. (ie green and pink look like brown!)
