Why do some dudes use these ubiquitous Strawman arguments to refute God's existence?

Flying Spaghetti Monster. Flying Garlic Bread Monster. Sleeping Beauty. Unicorns. Leprechauns. Pixies. Peter Pan. The Tooth Fairy. Santa Claus. The Easter Bunny. Dragons. Etc. ?

It's just odd to me- people are swift to point out logical fallacies that Theists commit- but they seem to turn a blind eye to the Strawman that some of them use themselves. What up, yo?
EDIT: Captain Sarcastic- actually, I know precisely what a Strawman argument is. It is a logical fallacy. It is setting up a proxy for something else (in this case, fabled creatures or entities), and giving the appearance of having refuted something, when, in fact, the proxy was the object of refutation. Hence, the "Strawman" analogy.
