First you can convert to Judaism & be 100% Jewish. It is not exclusively a birth thing.
Second, you don't have to follow Noahide laws. IF YOU want to adopt a Jewish concept of what a non-Jew needs to do to be seen as good in God's eyes then this subset of the 10 commandments are important.
There are various interpretations of the Noahide laws & on the one's I've read, they don't say you need to worship one God, just not multiple Gods. In Orthodox Judaism, the worship of Christianity FOR CHRISTIANS (but not for Jews) mets standards because you are ALSO worshipping the essential abstract God. (This is complex to explain.) The laws themselves are briefly written, so there is interpretation needed to even decide what they really mean. Therefore, various Jewish sages of the years have difference in their writings. Some minor, & some may matter more to you.
But again, if you don't want to follow these & don't believe in this Jewish concept -- Jews aren't going to come after you & try to convince you too. (Well, if you're into eating live flesh we might make a secular movement to stop it.)
Bottomline, this is non-Jews who ASK Judaism what is needed in our eyes to be seen favorably in God's eyes. Since we don't ask gentiles to become Jewish in order to be acceptable -- these are the standards for gentiles (non-jews). It's a way to follow Judaism's beliefs while not being Jewish.
However, Judaism doesn't believe it has the only path to God & doesn't spend time evaluating everyone else's paths. We're too busy with our own religion.
