Couple reasons.
First, bowls have small quantities of water. Which means the ammonia goldfish produce will become concentrated much quicker than it would in a large tank. Small quantities of water also tend to be less stable and are subject to rapid and frequent changes in things like pH.
Second, goldfish get large. They can grow to over a foot long, depending on the type of goldfish. Because the bowl doesn't have enough room to allow them to grow, their outside will stop growing, but their insides won't. Their organs will continue to grow and fill up all the room they have in their bodies, which will eventually lead to organ failure.
