Why do chinese restaurants not have knifes?

Every Chinese restaurant i go to, never have knifes when i ask for a knife and fork instead of chop sticks. They just bring me a fork and a spoon. I don't really mind that this happens, but i just wonder why.

Does any one know?

note: this is also the case in other eastern asian restaurants such as Japanese and Korean.
 
Because most of the meat are in large chunks so it is easier to pick up with chopsticks, and in Asia people are considered rude to cut their food at the table while eating it. Or at least that was what I was always told.
 
Because everything is either "finger food", or already cut to bite size.

There is no need for a knife, hence, no knife.
