Why and how is the water potential of potato and carrots different?

it's something to do with how potato has starch and carrots have sugars... but i dont know what... thanks in advance
 
there have different properties because they are different vegtables and read about them and eat them you well see some sweet potatos have glucose this is becouse it depends on the place and the type of potaos.
 
The higher sugar content in carrots will produce a lower water potenial than in potato.
