Why am I not losing weight even though I eat healthily?

I usually weight between 62.7-64kg but I can't get any lower or even to my lowest weight. I overcame a plateau last week so that isn't the case. Here is my daily food/exercise agenda:

Breakfast: either a boiled egg on a rice wrap with coffee w/ low fat milk, or 1 cup rice bubbles w/ 1/4 low fat milk
Snack: about 13-20 seaweed crackers, nectarine, apricots, watermelon
Lunch: low fat philidelphia cheese, tuna and salad wrap, sometimes another piece of fruit.
Snack: Another piece of fruit, maybe some more seaweed crackers
Dinner: Depends what my mum makes. Sometimes gluten gree pasta, a couple of quorn burgers with a few potato wedges or salad, brown rice with spinach and tomatoes.

Exercise is usally 30mins-1hr on the exercise bike, + 1 or 2 toning videos.

What am I doing wrong? Please help! Thank you in advance.
