Which picture control settings are best for the nature/outdoor pictures?

Ok here's the deal. I will go to the Oregon for this weekend to take some nature pictures (Cannon Beach and other interesting places) but I really want my pictures to come out nice. So I ask can maybe someone who is more experienced with picture control settings can tell me what Sharpness (1-7), contrast (-3 until +3), saturation (-3 until +3) and color tone (-3 until +3) should I use? I will shoot with Canon 40D.
