Where to Start with Muscle Building? Please Help.?

I'm 21 and weigh about 85kg's and I really want to develop more and build some definition. I have started a decent enough workout routine, but this diet stuff is so complicated. Please may someone give me some general rules and tips for creating my own diet plan that will help me get the best out of my training and help me develop real quick?
