Basically most of the oxygen we breathe comes from photosynthesis but since there is no plants on Mercury that only leaves one option, the breakup of water molecules by ultraviolet radiation. Could someone please explain this process or any other way that could contribute to the oxygen content on Mercury?

Elemental Oxygen on earth and mercury have the same original source: nuclear fusion.

All heavy elements have that same source. It is true that every heavy element in our bodies including Carbon and Oxygen were once fused together from lighter elements in stars. We are made of the star stuff.
