...name in place of the author? I'm citing a poem for a paper and I got it from a website. When creating my citation, do I write the poets name where I write the authors name or do I write the author of the website's name?
 
This is somewhat similar to citing a single poem from an anthology. Cite the author and title of the poem first, then the larger work in which you found it.

Remember that the point of citations is to guide the reader to the exact source of your material. The actual intellectual creator takes precedence over the person (or website) that collected the material
