Whats Wrong With My Old Mazda????????!!!!!!! HELP!!!!?

I have a 1991 Mazda Protege, 1.8L, SOHC, 5spd Manual.
I jus rebuilt the engine completely, and I rebuilt the Transmission with new bearings. I put a Kevlar stage 2 racing clutch in it. I made headers for it and I put a straight pipe in it. I replaced the mass air Flow sensor, Oxygen Sensor, and I replaced the Fuel Pump. I also put A short ram intake in it. THE PROBLEM!!! is the car sputters and stalls at idle AFTER the car warms up. WHATS GOING ON WITH IT??? I've tried everything, this problem started happening shortly after I rebuilt it. about a month after. then i started replacing the sensors, and did the work on th exhaust.
It also, when I accelerate, will JUMP up in RPM and the car will sometimes jolt. I think its something to do with the fuel pressure regulator, or injector, but it doesnt make sense they would do that only after the car warms up. IM SO PUZZLED, PLEASE ANYONE WITH GREAT KNOWLEDGE OF MAZDA HELP ME OUT!!!??? PLEASE!!???
The car does not have an obd1 or obd2 its something else, somethings weird, the only place will diagnose my car is the dealership, but since I put headers and other mods, mechanics wont work on it now,
