Whats the safest and cheapest way to book a holiday in this day and age ?

I want to go on holidays this yr with my bf, but like most of us i dont want 2 spend a fortune.I have been advised by friends many different ways 2 go about it, like booking flights and hotel seperate and avoiding the travel agents as they add on a commision.I live in Dublin, Ireland and all be it a recession i still dont c the prices goin down.Im lookin 4 a reasonable holiday, i have no particular destination in mind, just lookin 4 ideas as 2 how 2 go about booking it the best way possible to avoid been ripped off.Pls if u have any insight into this i would greatly appreciate this as im lost as this wud only be my 3rd holiday and i want 2 do this 1 without paying a bomb.I plan to go around June thru sept, preferable sooner rathere than later for a week to ten days.
