i was looking online and a state park has 7 miles hiking trail and 60 mile backpacking trail.. i was wondering what's the difference.
approx. how long would the 60 mile hike take?

Backpacking entails a back pack with food, tent, etc and being there more than an afternnon hike.

A hike is usually a one day affair. Backpacking entails taking enough to stay for a few days. A 60 mile hike would be great for a week vacation. Plan about 10 miles a day. That leaves you enough time to enjoy each stay, maybe fish or whatever. It could be done in much less time, but it would not be enjoyable.
