What's best for a buffet style reception?

I'm kind of clueless on what's best to have at a reception. We're going with the buffet style because my family are huge cookers and it's much cheaper AND people prefer choices so it's easier all the way around. Problem is, I'm not really positive on what's best to have other than the regular finger foods and veggie and fruit trays. Any suggestions?
 
Honey baked ham, roast beef or chicken is always good. Potato salad, green beans, rolls, asparagus, and macaroni and cheese.

polish sausage and kraut
These are a few that I've had at weddings 3 meats 3 sides
If your not on to big of budget call up some caterers and get some ideas and they let you go and taste test everything to.
My daughters dad paid for the food and she had giant pork chops that they grilled right there, sliced beef,orange chicken,roasted veggies,parsely potatoes,pasta salads,and a large dessert table. She didn't want a traditional wedding cake. The desserts were out of this world tho. Do call some caterers and sit down with them.
 
Are you serving just appetizers - or do you plan to serve a full meal?
If you are going to serve a full meal I would serve beef, chicken and some kind of veggie dish (pasta is a great veggie dish - and easy to make). Then you can just add some side dishes - potatoes, rice, roasted veggies, green salad, bread/rolls, etc.
If you are just going to do finger food then you can serve a wide variety of foods: Baked Brie with crackers, petite meatballs, chicken wings, deviled eggs, stuffed mushrooms, shrimp cocktail, potato salad, pasta salad, green salad, spinach dip with bread, pinwheel sandwiches, cold ravioli, etc.
