Whats a demanding fresh water fish for commercial comsumption?

I've been into fish, aquarium, raising/breeding, and fishing all my life. I didnt choose to it just kinda came natural to me since i was a kid.Though I have no degree in biology or aquacultual I have been thinking of my own business and been contiplating on farming fresh water fish for commercial consumption.Do u with experience have any idea of this field about cost, breed demand, compitetion, etc... it will be very apprciated. I'm thinking maybe in California or somewhere out here on the west coast.
 
The two top commercial producers in Kalifornia are Catfish and talapia. Both can be raised in small ponds or large 600 gallon tanks. Your main costs would be water electricity and feed. Kalifornia's water shortage is pushing the costs of water up sharply and regulations are driving power costs up as well. Once set up of your operations are in place minimal labor is needed. A single staff person can monitor several tanks. The market is strong here for these fish so sales will be good.
