what would cause a 1985 chevy s10 2.5 to start but not rev up or move anywhere?

There are too many possibilities to diagnose that problem with so little information.

A few examples, off the top of my head:

1. Loss of compression.
2. Retarded spark.
3. Fuel blockage.
4. Bad computer chip.
5. Loose linkage.
6. Vacuum leakage.
etc.
 
will seems to me that your clutch is gone (but i would have to see) if it is a (5 speed) and wont move and or the clutch is going and when you let out to go into first it stalls..probbally your clutch.. check to see if there is a leak around it if there is you know your master cylinder or slave cylinder is going..or may even just be low on brake fluid so top it off and try if stalls again.. you will know it is your clutch/flywheel assembly...
 
Sound like running too lean. Check the fuel supply (fuel pump, pressure regulator, fuel delivery rate).
