What type of diet should I be on in order to avoid plateauing? I exercise a lot?

Hi all,
I really need some help determining what type of diet I should be following. I have been tracking my calories and exercise with FitDay.com and have noticed that everyday I am eating from 1,600-1,900 calories, yet I am burning about 600-800 calories a day from high intensity cardio and weight lifting etc, and the website says that I burn around 2,000 just going through the day. I am 5'8 and 144 lbs and I want to remain strong and keep the muscle that I have since I will most likely be going to police academy, yet, I would also like to lose some more fat (about 10 pounds- or turn that into muscle).
