What to cook for the future in laws?

Hi,
I have my future in laws coming round for dinner in a couple of days. I have never cooked for them before, im not a very experienced cook, and need to cook something meaty (my fiancee is a vege so im not experience with cooking meat!).

I was thinking chicken breasts with a side salad (salad involving, grated carrot, cubed cucumber bits, sweetcorn, lettuce, chopped tomatoes...anything else i can add?

is that enough, chicken and salad?

should i add something else with/to it?

Also how do you get the chicken to have the crispy skin?

and what kind of dressing on the salad?

Chicken breasts basted with real butter is great, the chicken gets the nice brown crispy skin from basting the last ten minutes .. and the flavor is fantastic a nice fresh salad with the ingredients you mentioned is great also I would not add any garbanzo beans and always serve dressings on the side ..get 3 different kinds of salad dressings so they can choose what kind they like, a bottle of Italian, a bottle of ranch and a bottle of french ..you can also make some baked potatoes, serve real butter and sour cream on the side ,or mashed potatoes and gravy or a baked potato casserole like scalloped potatoes or hash brown casserole (allrecipes.com) this way you can always reheat the cassorole in the microwave right before serving so it will be at its best ..if you wish a fresh fruit salad would finish off the meal nicely , for a delicious fruit salad dressing ~marshmallow cream ,1/2 block softened cream cheese, folded in together and some bottled cherry juice ..enough to make it into a thick sauce ,served in pretty bowl on the side simply toss freshly washed and drained fruit like red& green grapes,strawberries, sliced kiwi, watermelon ,cantaloupe etc with orange juice and get keep in the refrigerator till serving time.. or you can buy a pound cake slice it and serve with lots of sweetened strawberries and whip cream or cool whip on top ..You dinner will be a huge hit!
 
hmm, well call your fiance and ask him what he thinks they would like. roasted chicken sounds great! put italian dressing on the salad. and add garbanzo beans with the salad! it's really good. i think to get the crispy skin just roast it a little longer. i wish you the best luck with the dinner!
 
To get the chicken crispy, firstly, preset your oven at 450 and shake the chicken in a bag of seasoned flour. (I like to use chilli or oregano and parmesan cheese, but that's my preference, might not suit you.) Place chicken pieces on a rack and cook for 30 - 40 minutes. The salad you have in mind sounds really nice. I would sprinkle Italian or French salad dressing over it and serve hot garlic bread or hot dinner rolls as an accompaniment. For desert, simply fruit salad and ice-cream or custard. I don't think you can go far wrong. Good luck and have a lovely evening with your future in-laws. Just relax and enjoy yourselves. -:)
