Watch Out for the Trees

I've never been to Ireland before. I'm going for a conference for 3 days in Limerick and then my boyfriend is coming over for another 4 days. We can arrange flights out of any city and I am thinking of renting a car. It's in early November and we are in our mid twenties. Generally I'm a big fan of art galleries, historical buildings and I would probably like to do some walking if the weather isn't too terrible. The driving is to get from A to B because I find driving a little stressful as I only drive once or twice a year. It's such a short time but I am wondering what places are not to be missed? Where would you drive to, and is it worth going to the beach in November? I am Scottish so used to the weather somewhat. Thanks for your ideas!
