What steps should I take if I want to start my own restaurant?

I am about to graduate from college with a degree in nutrition, but recently decided that i want to pursue a culinary career. I eventually want to own my own restaurant and be an executive chef, but know very little about business. Now obviously i am planning on eventually going to culinary school and getting extensive culinary training, but also would like to learn a little bit about how to run a business as well. Does a Food service management (hospitality mgmt) program at a culinary school still train you fairly well (as far as in the culinary arts), or is it mainly a business program? Im trying to decide between that, or taking basically an associate degree program in culinary arts and possibly taking online classes in business on top of that (because i do want to work as a chef, rather than a manager)...OR, is it not worth all the hassle, and just try co-owning a partnership business? Just wondering what you guys might suggest. Thanks!
