Take a look at a pair of these: http://www.performancebike.com/shop/profile.cfm?SKU=25792&subcategory_ID=3060 and they are made in a his/hers style. Almost any brand name is fine even Schwinn or Mongoose but only if purchased at a bike shop. DO NOT buy from one of the X marts or you will get junk that wont last and probably wont fit either. Fit is first!
Make sure you spend a little more in a bike shop and this way you get the service to go with the bike you get. Dont worry about all the different components that you see as no matter what you get from your LBS they will stand behind what you buy! Yes, I work for PBS in Va and we sell alot of these GT bikes in the spring and few if any ever come back for repair in the first 90 days unless neglected. All of those top name brands will certainly cost you more so looking for price will be your determining factor for what you end up with... You will primarily be looking for Low end groups of shifters and such as Alivio, Sram 3.0, Tourney and such. Priced in the $200 -350 dollar range and likely a hybrid style rather than a mtn bike but this is determined by your ridding style which should be discussed before you buy. It is hard to say what size bike each of you should have as standover height is relative, and several different factors come into play and you really need to stand over then sit and pedal on several different bikes to get the best on for you...we are all different. You will likely need a 17" medium frame and your husband might need a 19" large, but im guesing here on that.
