I pulled a turkey out of the freezer earlier this week to cook tomorrow. I realized tonight, that our exterminator will be here tomorrow to spray for ticks (found a couple on the dog). the problem is, when he does this we will have to be out of the house for 5 hours. he is going to be here sometime between 1 and 3. There is no way I can cook the turkey tomorrow. Concerned it will spoil by Saturday, I threw it in the oven at 7 tonight. It is a 13lb turkey, which means it will be done around 11:30 and it still has to cool before I put it in the fridge.
So my question is......What is the best way to cook and save this turkey for tomorrow night or Saturday lunch. I don't want it to dry out from over-cooking but don't want to chance food poisoning by under-cooking.......What should I do?????
