try this filipino dessert. it is sweet plantains wrapped in egg roll wrappers with brown sugar and jackfruit. the recipe calls for super ripe plantains, ripe jackfruit in can and not the young jackfruit in a can (big difference between the two), brown sugar, and oil, (vanilla ice cream is optional). first step is separate the egg roll wrappers. it's easier if your fingers are wet. next step is open the can of ripe jackfruits and cut them into thin strips lengthwise. next step is to peel the plantains and cut each banana lengthwise. the width depends to how you like it. next step is to cover each piece of the plantain in brown sugar and put it on the edge of the egg roll wrapper. then put about two strips of the jackfruit and wrap it like a normal egg roll. fold the sides and then roll to the end and lightly brush the end with water so it sticks. then just deep fry them until golden brown. you can serve it with a scoop of vanilla ice cream if you want.
