I have ~20-30 gallon aquarium and I would like to know what kind of fish I could put in there. I don't want to get the standard beta or gold fish. I have had those in the past and are just too plain. I want to get something a little out of the ordinary that is easy to care for and looks interesting.

try maybe:some tiger barbs(6) or even some guppies or mollies would look nice.

red eye tetra
sarpae tetra
corydoras

I would try a low ammonia fish. Gold fish, koi, and those of the like give off high ammonia levels. In a tank that size it could spike over night possibly killing your fish, they also require lots of tank cleaning and about a 30% water change once week.
You could try some plecos, small chilids, or danios. All stay a decent size for a 20-30 gallon, are easy to care for, and also interesting to look at.
