what itunes do i need, so that i can jailbreak my iphone again?

i want to do a restore because its running really slow, i have downloaded the newest version of itunes and tried restore, but it wants me to update as well to 4.1, i have heard that they dont have a jailbreaking software for this update. what should i do? i need a restore but not an update
