Sacrifice in this case would be the things parents gave up to ensure the child would grow up having all the possible things a child could have and more. Such as food on the table, clothes on their back, proper education etc. They may have given up the cost of many vacations or just given tough love in order for their child or children to grow up with proper morals and standards.
 
I received a Father's Day card from my oldest son, a father of three, who wrote: "It seems the older I get and the more my family grows the more I appreciate all the time and sacrifice you and Mom went through on our behalf.
 
Sacrifice in this context means the time effort & money you put into bringing up your family. Your son son is telling you what good parents he had that he now realises its not easy being a parent & you have to sometimes give up your own desires for the sake of your kids. Be proud your son loves & appreciates you you did a good job raising him.
