The Star Wars parody was called "Star Wars Blue Harvest". "Blue Harvest" was a code named used for the first Star Wars movie while it was still in production.
There are two more star wars parodies coming from Family Guy. Next season will begin with"Something, Something, Something, Dark Side. a parody of "The Empire Strikes Back". A parody of the third Star Wars movie Return of the Jedi" has been written, and has been through it's first preliminary reading. No artwork has been produce as yet.
