What is the default fuel mapping for a 2001 ducati 750 ss?

I am the third owner of this ducati so I don't have the owner's manual, but have download several with no help.The first owner put on after market exhaust and then put on the regular exhaust when he sold it. Now I have a puddering sound that kicks my rpms and speed way down randomly.I've heard it is the back pressure from the exhaust change without editing the fuel mapping back to factory default. I need to know the factory default which I haven't been able to find and a quick how to to fix it.
It happens at low rpms, hot or cold it doesn't matter. The fuel mapping was a diagnose of a mechanic to be the problem. And when I said random I meant randomly popping at those lower rpms. Either way knowing the correct fuel mapping and how to check it would fix it or show me another problem, so why not check.
 
I can't answer your mapping question, but you say the rpms change randomly. If it does not occur in repetitive cycles or at a specific rpm speed or range, then I have doubts as to whether it's the fuel map. All remapping does is change the amount of fuel injected at a specific engine rpm. If it was remapped, it would be running too rich or too lean at certain rpm ranges constantly, not randomly.

I suspect there's other things going on, most likely electrical. It could be a bad sensor, bad or loose connection, pickup coil going out or bad plugs, wires or ignition coils.

ounds like you need to do some experimenting so you can narrow down the circumstances when it occurs. Example: Only when hot, cold or all the time? Accelleration, decelleration or steady state? Good luck, you'll probably need it since intermittent problems are the hardest ones to find.
